MINI RASPBERRY CHIA PARFAITS



After the holidays I made a resolution to eat cleaner and healthier.  I am sticking to a diet high in fruits, veggies, protein and healthy fats and have started cooking at home again, something I used to do a lot but had not been recently.  I made these very simple mini parfaits to snack on and they are delicious!  They are also vegan, gluten free and sweetened with stevia.

INGREDIENTS

1/2 cup chia seeds
2 cups coconut milk (or almond milk)
Stevia (to taste)
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
  1. Place chia seeds in a bowl.
  2. Whisk coconut milk, stevia, vanilla extract and cinnamon together; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 3 hours, or overnight for best result.
  3. Stir pudding and spoon into small cups, layering the raspberries in the middle and on top.
  4. Enjoy!
